Taco anything is always welcomed in this house!
When I figured out how to make taco soup, it was the best day! So I want to share it with you if you enjoy taco everything like me.
Again, as with all of my recipes, please taste your meal as you’re cooking it to determine if it needs more of a seasoning. That’s my biggest annoyances with recipes— they’re tailored to the authors tastes and some of these bloggers out here have tastes that don’t match mine and I’m sure I have tastes that don’t match others!
I know for some not having measurements is stressful, but you got this! Start with maybe a 1/4 tsp and go from there! 1/4 tsp isn’t going to do enough, in my opinion, to alter the total flavour of a pot of soup, so just add and taste, add and taste!
Taco soup!
What You’ll Need:
-2 cans of your fave bean (I use black and kidney)
-one onion
-As much garlic as your heart desires
-a can of corn
-a can of stewed or steamed tomato
-Follow Your Heart Mozzarella shreds
-tortilla chips
-seasonings like chili, cumin, salt, turmeric, garlic and onion (you can add whatever you want).
How to do it:
Sautée your chopped onion and garlic until the onion is translucent. We’ve been doing oil free lately so just use some water to sautée those!
Once that’s done, add in your beans, corn, and tomato (drain them first). Add in enough water to cover everything. Turn your heat to a medium. Add in your seasonings. Again taste as you go. Cumin is what gives this a taco flavour! Chili is spicy obviously so add as much or as little as you like. Y’all know I add turmeric to everything because it’s a very mild almost non existent taste but has SO many good health benefits! Salt to taste. Add the salt slowly!
Once everything is heated and flavoured, dish it up, add in some tortilla chips, sprinkle with cheese and green onion and enjoy!
