A delicious treat for whenever, or for Apple week!
This is a vegan recipe, but potentially not allergy friendly as it does contain allergens.
Ingredients:
3 cups flour
2 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
2 cups sugar
3 flax eggs (for non vegans this is 3 tbs of ground flax and 9 tbs of water)
1/2 cup of melted vegan butter
3/4 cup oil of your choice
1 tsp vanilla
3 apples peeled and chopped (make sure to get rid of the seeds and the harder core bits)
Glaze ingredients:
I’ll be honest, I never measure this. It’s milk, powdered sugar, and vanilla. Start with small amounts because you can and will end up with way too much.
Steps:
Preheat the oven to 350*
Make your flax mixture so it can sit for a minute or two.
If you haven’t peeled and chopped the apples, do it now.
Mix the wets (Flax eggs, melted butter, oil, vanilla) in with the sugar until combined.
Add the dry items (flour, cinnamon, baking soda, salt) to the wet ingredients and mix. Add in the apples, mix thoroughly. Pour into any cake pan you like to use, bake for 30-35 minutes until golden.
Whilst its cooking, attempt your glaze.
Let the cake cool completely before adding the glaze otherwise the glaze with melt off. It’s a lesson in patience for everyone!
