Taco Tuesday (or Thursday depending on my mood) has been another meal day I’ve stuck with to take the mental strain of choosing what meal to cook for dinner.
I have other things my brain finds more important to focus on, like the impending doom it always senses… whether or not there is any.
That’s my Roman Empire ladies and gents.
Anyways, Taco Tuesday or Thursday.
Another simple recipe that maybe new vegans or dairy free folks might feel like they have to give up.
Please, if you’re from a country where tacos are a national staple, just look away now. I don’t want to piss anyone off with my American vegan tacos. I think they’re delicious, but I’m well aware these aren’t ✨authentic✨
Ingredients:
-Impossible ground—optional. You can also easily do this with any type of bean you enjoy. Tofu, walnut meat, tvp etc.
-tortillas. The kids use corn and I use wheat.
-tomatoes
-lettuce
-onion
-bell pepper (I didn’t have any this time around).
-taco seasoning. Bless you if you make your own. I got that Costco brand taco seasoning.
-turmeric—optional
-dairy free cheese—I recommend violife or “better goods” from Walmart.
-whatever else toppings you like. Pico, grilled corn, jalapeños, guacamole, etc
Make your tacos.
Chop and sauté the onions in either olive oil or if you’re trying to limit oil, use water (there is oil in Impossible just a heads up. I believe they have a Lite oil version though—don’t quote me). If you’re using bell peppers chop and sauté those too.
Plop in your Impossible or beans or whatever protein you’re using.
Cook it all together.
I like to dump in half a cup to a cup of water at this point. I like a saucy taco.
Add your taco seasoning to taste. We don’t do measurements in this house. In fact, that half a cup to a cup of water was an absolute guess.
Chop up your toppings.
Warm your tortillas however you choose to do so. I’ve done them on a skillet and in the microwave when none of my pans were clean. Whatever works.
Plate your tacos! I do like to melt the cheese a bit in the microwave. Then I add the rest of the toppings like lettuce etc.
The kids LOVE taco night. I think it’s because they get to construct their tacos. I don’t make them for them.
