This recipe can be used for any type of pancake or waffle, whether sweet or savory.
It’s vegan, so it’s dairy free, it’s also soy free (if you choose a non soy milk) so if your kiddos have a soy allergy its fine for them.
There’s no refined white sugar (or brown sugar, if that matters). It uses date sugar! For my folks who are vegan for their health (don’t you dare start an argument with me about VeGaN mEaNs YoUr VeGaN fOr tHe aNimAls. We’re on the same team, babe), date sugar is one of the important players of this recipe. Dates significantly increase the growth of beneficial bacteria in our gut as well as dates can block cancer cell growth completely. Dates are also low on the glycemic index, so it’s worth a look into if you have diabetes. Dates can also lower triglyceride levels. Finally, dates contain more vitamins and minerals than many common fruits.
This makes the tastiest, fluffiest waffles and pancakes, it’s a fave in our home!
Here’s the recipe:
1 cup of flour
1 cup of non dairy milk (I use Ripple)
1 Tbsp baking powder
1 tbsp date sugar
1 tbsp ground flax seed (optional, but it give it more health benefits)
1/4 tsp salt
2 tbsp oil
Easy instructions:
Mix it all, and toss it into your waffle maker or pan to make pancakes.
This recipe makes 3 waffles.
